How Suya Is Made in Nigeria
Suya is one of Nigeria’s most recognizable street foods, known for its bold aroma and deep, savory flavor. Traditionally, Suya is made using a simple but intentional process that prioritizes seasoning and technique.
Step 1: Preparing the Meat
Thin slices of beef (and sometimes chicken) are cut to maximize surface area. This allows the seasoning to coat the meat evenly and absorb deeply.
Step 2: Seasoning with Suya Spice
The meat is generously coated with Suya spice — a blend made from ground peanuts, peppers, and warm spices. Unlike marinades, Suya seasoning is applied dry, helping it cling to the meat during grilling.
Step 3: Skewering and Grilling
The seasoned meat is skewered and grilled over open flames, traditionally using charcoal. As it cooks, the spices toast, releasing a nutty, smoky aroma while forming a flavorful crust.
Oil may be brushed lightly to prevent sticking and enhance browning.
Step 4: Serving
Once cooked, Suya is sliced thin, dusted with extra spice, and served hot. It’s often enjoyed simply, letting the seasoning and grilling technique shine.
